Banana Cake


INGREDIENTS:

2 cups sifted flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 cups mashed bananas
2 tablespoons low fat milk
1 tablespoon water
1/4 cups walnuts or cashew nuts, chopped
1/2 cups raisins (optional)
1/2 cup butter or butter substitute
3/4 cup packed brown sugar
1 whole egg
2 egg whites

PROCEDURE:

1. Preheat oven to 325 degree F. Line a 9 x 5-inch loaf pan. Set aside.
2. Sift the flour, baking powder and baking soda together in a sheet of wax paper.
3. In a bowl, combine bananas, milk, water, walnuts and raisins. Set aside.
4. In another bowl, cream the butter and sugar until fluffy. Add the whole egg and whites. Blend well.
5. Add the flour mixture alternately with the bananas. Pour into the pan and bake until done.
6. Cool in the pan then unmold from pan and slice.

TIP:

To lower the fat in baked products, use a butter substitute - a lower calorie product that looks and tastes like butter with less saturated fat and no cholesterol.
